Fukamushi (literally "deep steamed") teas are steamed for a longer period of time than usual during the initial processing to arrest oxidation. The result is a tea with lower astringency, caffeine content, and a darker color. This Sofu varietal infuses to a nice emerald green color, with a mildly grassy taste and aroma.
Kakegawa, in Western Shizuoka Prefecture, enjoys a reputation as one of the top tea producing regions in the country and both volume and quality. The Fukamushi processing technique is widely used in the Kakegawa area.
